Meatballs, Roasted Carrots, Kidney Beans and Wild Rice

The meatballs were easy to make. Check out my recipe here. The only difference is that I did not fry them in a pan. I just spread them out on a baking tray together with the marinated carrots and baked them for about 15 minutes at 220°C. The carrots were just simple marinated with soy oil, curry powder, garlic powder, cumin, salt and pepper. The wild rice was cook in a pot with a dash of salt and the kidney beans came right out of the tin. But they are still healthy and very filling. This is another dish that does not need to reheated in a microwave. If you have one at hand though, go ahead and reheat it. It goes either way. And no sauce needed. If you are a sauce kind of person then just whip up something simple like a lemon butter cream sauce. Just something that gives this simple dish a kick. Lecker smacker!
