Vegan Tortellini Salad

It doesn’t matter what kind of situation you are in. If you are expecting friends or family over or are throwing a party or are just hungry and in need of something quick, easy and scrumptious. This is just the right thing for you. It also works perfectly as a side dish or a main dish. Your choice!

Let’s get rollin’…

Time: 10 Minutes

Ingredients for 2 main meal portions:

  • 500 gr tortellini (stuffing of your choice, e.g. spinach or tomato)
  • 1 cucumber
  • 4 large tomatoes
  • 3 tbsp olive oil
  • 2 tbsp vinegar (of your choice)
  • Salt and pepper to taste

Utensils:

  • Cooking pot
  • Kitchen knife
  • Chopping board
  • Large bowl

ToDo:

Follow the direction for cooking your tortellini on the package. Cut your cucumber and your tomatoes up into quarter slices about 1 cm thick. Add all your ingredients into your bowl and stir well. Add salt and pepper to taste and you are done. Lecker smacker!
