Vegan Baked Cannelloni

When I first saw a cannelloni my first thought was that it looked fun to eat. And that is exactly the only thing I can come up with which would be different to pasta or lasagna. It’s form. But that is also something to be respected. It is well known that people do judge their food by the way their food looks or the way they have to eat it. Some people prefer finger food at a party, others prefer chop sticks and others prefer a steak knife. So if your are up for some rolled up sushi-like Italian lasagna, then try out some cannellonies.

Start lasagna rolling…

Time: 30 minutes

Ingredients for 2 portions:

  • 8 lasagna sheets (or store bought cannelloni rolls)
  • 1 bell pepper
  • 200 gr carrots
  • 2 stems white celery
  • 50 gr frozen peas
  • 200 gr zucchini
  • 1 onion
  • 1 garlic clove
  • 3 tbsp vegetable oil
  • 1 tbsp dried Italian herbs
  • 4 tbsp tomato paste
  • 200 ml tomato puree
  • 50 gr all purpose flour
  • 100 ml water
  • 1 tbsp homemade vegetable broth (or 1 tsp instant vegetable broth)
  • Salt and pepper to taste
  • Chili powder (optional for extra spice)

Utensils:

  • 3 cooking pots
  • 1 baking dish
  • Chopping board
  • Kitchen knife
  • Garlic press

ToDo:

Start by cooking your lasagna sheets for about 2 minutes so they can be rolled. Set them aside to cool. Next chop up all your veggies into bite size pieces and start heating up your second pot with 1 tbsp vegetable oil. Throw in your celery, onion, carrots and bell pepper together with your tomato paste and pressed garlic. Then constantly stir them at a high heat for about 3 minutes. Then turn the heat down to medium and add your tomato puree and Italian herbs and let it all simmer for about 5 minutes. Then add  your zucchini, frozen peas, salt and pepper to taste and continue cooking for further 2 minutes. If your like extra spiciness, just add 1 tsp of chili powder, or as much as you like. In the meantime heat up your oven to 200°C. Now grab one of your lasagna sheets and add some of the veggies to it and roll your sheet up so you get little rolls altogether. Lay each roll next to each other in your baking dish. In your third pot heat up 2 tbsp of vegetable oil and add the flour to the oil and stir quickly. Then add your water and stir and add the vegetable broth as well. Let it cook up and keep stirring. If the sauce gets to thick, just add a little more water. Add salt and pepper to taste and pour the sauce over your cannellonies. Now shove your baking dish into the oven for about 25 minutes. Lecker smacker!
