Vegan Stir Fried Noodles

When I’m in the mood for some take-out and check out the menu for Chinese food I always seem to come across fried noodles. I love fried noodles and could eat them everyday! But I never seem to order the fried noodles, because I always tell myself that they are much yummier and healthier when I make them myself. I know what you’re thinking. Why order take out at all if I prefer healthy food? Well sometimes even I am just plain old lazy and enjoy a sitcom night with MSG-drenched food. Muahhahaa!

Let’s start woking…

Time: 25 minutes

Ingredients for 2 portions:

  • 200 gr dried rice noodles
  • 1 bell pepper
  • 1 zucchini
  • 200 gr bean sprouts
  • 1 carrot
  • 2 spring onions
  • 4 tbsp soy sauce
  • 1 tbsp sesame sauce
  • 1 tbsp roasted sesame seeds
  • 2 tbsp vegetable oil
  • Pepper to taste
  • 1 tbsp sriracha sauce (optional if you enjoy spicy food)


  • Chopping board
  • Kitchen knife
  • Wok
  • Cooking pot


Follow the cooking instructions for your noodles and precook them in your cooking pot with water. Cut up all your veggies the way you like them best. If you are looking for some inspiration, I cut my bell pepper and onion into thin stripes and zucchini in quarter slices and lastly carrots into match stick sized stripes. Heat up your vegetable oil in your wok and fry your spring onions first. Then add the bell pepper and carrots as they take the longest to cook. Stir fry them for about 4 minutes. After that add your zucchini and stir fry for another 4 minutes. Then add your bean sprouts and your cabbage. Stir fry for another 4 minutes and lastly add your noodles and all the other ingredients and stir fry for another 4 minutes. And you are done! Lecker smacker!
