Vegan Veggie Quiche

When my friend once asked me if we should make vegan quiche together the only I could do was stare at her, probably with a certain look as she asked me what was wrong. I asked her how we could make quiche without it’s most important ingredient, and no I don’t mean love. Usually quiche needs a lot of eggs to bind all the ingredients together and cheese. Both ingredients give quiche it’s well known consistency. Her answer was simple. Tofu. You just have to switch out eggs and cheese with tofu and soy flour. Soy flour is a common substitute in the vegan cuisine for eggs. Usually you mix one tbsp of soy flour with one tbsp of water and that should substitute one egg. But I usually add one and a half tbsp of soy flour just to be safe. 😉 Anyways since then I have been making vegan quiche. I cannot remember the last time I made “normal” quiche with eggs.

Full speed ahead!

Time: 25 minutes

Ingredients for a 24 cm cake pan:

  • 150 gr all purpose flour
  • 100 gr dinkel wheat flour
  • 150 ml water
  • 40 gr fresh yeast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 340 gr soft silken tofu
  • 6 tbsp soy flour
  • 50 ml soy cream
  • 1 tbsp vegetable oil
  • 200 gr broccoli
  • 100 gr bell pepper
  • 50 gr frozen peas
  • 100 gr zucchini
  • 2 tbsp homemade vegetable broth (or 1 tbsp instant vegetable broth)
  • Salt and pepper to taste

Utensils:

  • 24 cm cake pan
  • 2 mixing bowls
  • 1 frying pan
  • 1 Chopping board
  • 1 Kitchen knife
  • Hand mixer with beaters and dough hooks

ToDo:

Add your flours, water, yeast, olive oil, and salt to one of your mixing bowls and knead your dough with your hand mixer for about 5 minutes. Then set it aside and let it rise a little. Now cut up your veggies into bite size pieces. Then heat up your vegetable oil in your frying pan and fry your veggies for about 5 minutes and set them aside. Grab your second mixing bowl and add your soft tofu, soy flour, soy cream and vegetable broth and use your hand mixer to stir your mixture. Add the veggies to your soy mixture and add a little salt and pepper to taste. Stir it all with a spoon as you don’t want your veggies to become all mushy. Preheat your oven to 220°C. Now spread out some oil into your cake pan and spread out your dough in your cake pan with your fingers. Make sure the rim is covered with dough as well. Then add your soy veggies mixture and spread it out evenly. All your have to do now is stick your cake pan into the oven for about 30 minutes and you may enjoy this delicious dish!
