Vegan Potato Gratin

Looking for something simple and quick that will please just about anyone? I know just the right thing that will let you chillax and prepare your next meal without a hassle. And you won’t need many ingredients or anything from a fancy store. You will find these simple ingredients at any store and you won’t max out your budget!

Time: 10 minutes

Ingredients for 1 portion:

  • 250 gr potatoes
  • 150 ml soy cream
  • 2 tbsp homemade vegetable broth (2 tsp instant vegetable broth)
  • 1 tsp soy oil
  • Salt and pepper to taste


  • 1 cooking pot
  • 1 chopping board
  • 1 kitchen knife (or a vegetable slicer)
  • 1 peeler
  • 1 baking dish


Add your soy cream, vegetable broth, salt and pepper to a pot and heat it up until it starts to boil. Then turn down the heat to simmer while you prepare the potatoes. In the meantime preheat the oven to 180°C. Next peel your potatoes and either slice them into really thin slices either with your chopping board and kitchen knife or with my favorite tool, a vegetable slicer. Now grab your baking dish and spread your soy oil to the bottom. Layer half of your potato slices in the baking dish. Add some salt to the potatoes and pour half of your soy cream mixture over the potatoes in your baking dish. Lastly add the rest of your potato slices and the rest of your soy cream mixture and just let it cook in the oven for about 30 to 35 minutes. Et voilá! Lecker smacker!
