Fiesta Quesadilla

Who doesn’t enjoy Mexican food? It’s always delish! And one of my favorites to bring to the office is quesadilla. It’s simple and can be eaten warm or cold. And you always have a hand free while eating so your can enjoy a good book while eating during your lunch break, or ok I’ll have to adjust my blog to the new age with smartphones and tablets and all. So your can still use your e-book and eat at the same time while on lunch break.

But not only is this scrumptious Mexican calzone a great deal for the office or to go, it’s also perfect for a party or movie night or game night or any night you think is appropriate.

¡Ay, caramba!

Time: 15 minutes

Ingredients for 4 quesadillas:

  • 8 tortilla wraps
  • 200 gr grated cheese
  • 120 ml tomato sauce
  • 1 tsp tabasco
  • 1 bell pepper
  • 100 gr zucchini
  • 200 gr cooked ham
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Utensils:

  • 1 chopping board
  • 1 kitchen knife
  • 2 frying pans

ToDo:

Start by cutting up your bell pepper and zucchini into tiny cubes and your ham into small square pieces. Fry your zucchini up in a frying pan. Now start heating up one tortilla wrap in your frying pan. While your tortilla wrap is heating up quickly add some of your cheese and spread it out then bell pepper, zucchini and ham. Top it all off with some tomato sauce (about 40 ml) and a dash of salt and pepper. Now sprinkle some more of your cheese on top and cover it all up with another tortilla wrap. Wait until the cheese at the bottom has melted and flip your tortilla burger and let the cheese on the other side melt as well. The cheese will make sure that your tortilla wraps stick. Do the same for the rest of the ingredients. Lecker smacker!
