Vegan Carrot Potato Stew

The winter calls for something warm and yummy. So here is an easy and low budget solution and on top of it all healthy! My version is going to be steamed. As I have mentioned in earlier posts, I am a huge fan of steaming and I am really lazy. 😉

Let’s start steaming…

Time: 10 minutes

Ingredients for 2 portions:

  • 400 gr potatoes
  • 200 gr carrots
  • 1 onion
  • 100 ml soy cream
  • 2 tbsp homemade vegetable broth (or 2 tsp instant vegetable broth)
  • Salt and pepper to taste

Utensils:

  • 1 chopping board
  • 1 kitchen knife
  • Electric steamer
  • Peeler

ToDo:

Peel your potatoes, carrots and onions. Then dice them up into literally dice sized pieces. Then grab your steamer basket meant for soup or rice (which mean the basket without holes in it) and add all your ingredients in and stir well. Then set the timer to 15 minutes. When the alarm goes off, take off the lid and stir well. Then put the lid back on and steam for another 10 minutes. Now your meal should be done. Quick, yummy and healthy! Lecker smacker!
