Simple Gnocchi with Veggies

Now this is something that you can cook up anytime and will take longer to devour than you took to cook it. Amazing isn’t it? And it’s so simple and quick and it’s a real crowd pleaser. The best part is that it even tastes good cold, so if you are in need of something for the office and don’t have access to a microwave you have hit the jackpot!

Time: 10 minutes

Ingredients for 2 portions:

  • 300 gr store bought gnocchi
  • 1 onion
  • 1 garlic
  • 1 bell pepper
  • 1 zucchini
  • 1 tbsp sunflower oil
  • 2 tbsp tomato paste
  • 1 tsp dried Italian herbs (oregano, rosemary, basil, parsley, etc.)
  • Salt and pepper to taste


  • Wok
  • Cooking pot
  • Chopping board
  • Kitchen knife
  • Garlic press


Heat up some water in your cooking pot and cook your gnocchi according to the instructions on the packaging and drain them. Cut your zucchini into quarters lengthwise and then into 1 cm slices. Do the same with your bell pepper and cut your onion into bigger chunks that are about as big as your bell pepper pieces. Grab your wok and heat up the sunflower oil. Now saute your onions and press your garlic directly into the wok. Quickly add your tomato paste, the rest of your veggies and your dried Italian herbs. Don’t forget to keep stir frying as you don’t want your food to burn. If necessary add some water to make your sauce a little more liquid. Lastly add your cooked gnocchi to the wok and stir a little more and your dish is ready to be devoured! Lecker smacker!
