Couscous Salad

Couscous salad is one of my favorite dishes to make for the office. It’s fresh, healthy and delicious. But most of all, it’s super easy and quick to make. If I’m throwing a party then couscous salad will definitely make it to the table and most of my friends expect this scrumptious salad to be served. During the last party that I hosted I actually left out the couscous salad on purpose and tried something new for a change and I was asked if I had forgotten to take out the couscous salad. Sadly I had to leave them devastated and let them try other divine dishes of mine. I guess this dish is another crowd pleaser that just has to be served.

Time: 15 minutes

Ingredients for 2 portions:

  • 200 ml couscous
  • 25 gr sun dried tomatoes
  • 150 ml water
  • 1/2 cucumber
  • 100 gr canned corn
  • 1 tsp chopped coriander
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • chili powder to taste
  • salt and pepper to taste

Utensils:

  • Cooking pot
  • Chopping board
  • Kitchen knife
  • Measuring cup
  • Large bowl

ToDo:

Mix tomato paste, soy sauce, sesame oil, balsamic vinegar, olive oil, chili powder, salt and pepper into the measuring cup and add the water. Stir it all well. Fill the couscous and the finely chopped sun dried tomatoes into the cooking pot and add the sauce from the measuring cup. Cook and keep stirring the couscous until the sauce is sucked up and the couscous is soft. Keep aside to cool. Now chop the bell pepper and cucumber into little cubes and add them to the large bowl. Also throw the finely chopped coriander into the large bowl. Lastly add the cooled couscous and stir well. Now just fill up your bento box and you are ready for work! Lecker smacker!
