Fried Rice

Try to make your work colleagues jealous and bring your own precooked and packed fried rice to the office. Heat it up in the microwave and enjoy a healthy meal at the office and save yourself some money on canteen food or take out. If you don’t have access to a microwave then just sit on it till it gets warm! OK jokes aside, if you don’t have access to a microwave you can simply eat this meal cold or at room temperature. It tastes great either way.

Time: 35 Minutes

Ingredients for 2 portions:

  • 2 cups rice (rice cooker cups)
  • 2 eggs (if you are vegan, either substitute with tofu or just leave this out)
  • 100 gr corn
  • 100 gr sugar peas
  • 1 bell pepper
  • 3 tbsp roasted onions
  • 3 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tbsp sunflower oil
  • Chili powder or sriracha sauce to taste for spiciness
  • Salt and pepper to taste

Utensils:

  • Cooking spoon
  • Wok
  • Chopping board
  • Kitchen knife
  • Rice cooker

ToDo:

Start by cooking the rice in the rice cooker. Prepare the rice as you would usually do. While the rice is cooking grab a bell pepper and cut it into small cubes or whatever you prefer. Heat up your wok with the sunflower oil and then crack the two eggs into your wok. Stir the eggs up so you end up have scrambled eggs. If you like you can add salt and pepper to the eggs. Then add the bell peppers and fry them for a while until you think they are done. Now add the peas (I use frozen peas as they are juicier and easier to handle) and the corn (I use canned corn) and stir fry for about 3 minutes. Once the rice is cooked add the rice to the wok and stir fry all the ingredients together. Now add the soy sauce, sesame oil, chili powder/sriracha sauce, salt and pepper. Continue stir frying for another 3 minutes. Once done turn off the heat and add the roasted onions and stir well. Now just fill up your bento box and let the fried rice cool off before you putĀ the lid on or else you’ll have some trouble gettingĀ the lid off at work. Lecker smacker!
